      This is a favourite of mine and my lady friends. We often have this with a Chinese meal as a side dish of vegetables. It takes about 15 - 20 minutes to cook, and comes from Ken Homs "Top 100 Stir Fry Recipes" book. The original Ken Hom version uses spring onions, but I am not a fan of them so usually leave them out.Ingredients450 g carrots1 tablespoon groundnut oil3 tablespoons roughly chopped garlic1 tablespoon finely chopped or grated fresh root ginger3-4 tablespoons water2 tablespoons roughly chopped corianderSalt and freshly ground black pepperStart off by peeling the carrots, then slice them at a slight diagonal, thinly.       Taste Orange-Ginger Ham Steak
      Great for lazy days or when you don't want to heat up the house! (If you have leftover ham from another meal, just cut thick slices to make this.) This can also be adapted for the grill by using the orange sauce as a basting sauce.You will need:1 tablespoon butter1 1/2-2 lbs ham steaks , 1-inch thick1/2 cup frozen orange juice concentrate , thawed1/4 cup dry white wine1 teaspoon dry mustard1/4 teaspoon ground ginger4 canned pineapple slicesPreparation:Cut ham steak into four pieces. Lightly brown in large frying pan in 1 T butter, then remove and brown pineapple slices. Place on top of ham slices.Combine concentrate, wine, dry mustard and ginger. Return ham to skillet, cover with pineapple slices and pour sauce over ham. Cover and simmer about 15-20 minutes until heated through.

The delicate flavour of the quinoa counterbalances the citrus kick of the tofu, and the greens had a smooth, almost creamy texture from the radish tops.The tofu was wonderful in itself, with the texture very akin to pork, and even the color was spot on. I find that red wine and tofu cooked together in most forms makes for a good substitute for heavier meats in recipes. You can use almost any fruit with this recipe.INGREDIENTS:1 Mango1 Pear1 cup Seedless Grapes1/2 Papaya4 Dried Apricots1 Lime1 Vanilla Bean, Seeds Scraped (or 1 tsp. extract)4 tbsp. Honey2 tbsp.       I was introduced to Kidney Ginger Soup by my wife. All along, my encounter with pig’s kidney is in the stir fries which I absolutely love. So, having kidney soup was new to me and took some getting used to. The taste is slightly hot due to the liberal use of julienned ginger and I believe this soup is suitable to aid “releasing of air”, if you know what I mean Preparation of pig’s kidney for cooking can be an unpleasant experience for the uninitiated. The smell can be a bit offensive and might turn you off completely for after all, the end product of kidney goes south. Worry not however as after cooking, all memories of the offense evaporates Anyway, when you buy the kidneys, ask the butcher to slice the kidney to remove the middle part which looks like some white netting. Wash it thoroughly. You might want to consider soaking the kidney in water with some slices of ginger.       Stir fried fish slices with ginger and spring onions (scallions) is a simple yet delicious dish to prepare. You can use fresh fish or frozen fish such as dory for this dish. White fish is preferred. The key to this dish is having a stove with really hot flame so that you can cook this dish fast. Cook it a little longer and it will turn a tad too soggy.
