The other night, I had dinner with some old friends at The Melting Pot - it’s a fondue restaurant, if you’ve never heard of it. It’s the BOMB, too - and I looked forward to that meal all week long! It didn’t disappoint, either. Everything was soooo yummy - except for the white chocolate fondue. That was a disappointment. The dark chocolate, though, I almost painted on my face, just because I loved it so much - I wanted to be one with the chocolate!
What I’ve been craving ever since then, though, is the cheese fondue! That’s always been my favorite. The one I really liked was made with sharp cheddar, lots of garlic, and Fat Tire beer. Dude. I could have eaten the entire pot by myself. The other one was made with Swiss cheese and white wine, and it, too, was just ridiculous. I have been daydreaming about molten cheese and skewers of Granny Smith apples and rye bread cubes ever since.
My family and I are heading to my sister's in Switzerland soon, which explains why I haven't been writing much on my blogs. The amount of preparation, planning, packing and purchasing has been overwhelming.
So off to Switzerland we go in search of chocolate and cheese. (With a brief stop London for some bangers and mash or maybe beans on toast.) And who says you can't do fondue if you're doing Weight Watchers? This recipe has only 2 Points per serving!
Warm Beer and Cheese FondueServings: 12 Preparation Time: 10 min Cooking Time: 10 min
Ingredients:
1 can or bottle light beer, 12 fl oz each
1 tsp dry mustard
1/4 tsp ground red pepper
1 pound low-fat cheddar or colby cheese, shredded
3 Tbsp all-purpose flour
Instructions:
In a medium saucepan over moderate heat, warm beer until it boils; stir in mustard and pepper.
In a bowl, toss cheese with flour.
Slowly add cheese to beer mixture, stirring.
