      So, I get an email yesterday from my Mom, wondering if perhaps I'd shrugged off my mortal coil and no one got around to informing her. Nope, I'm still here Mom, just too damn busy to cook anything whatsoever worth looking at.I mean, look at this pathetic meal from last night.....I actually served spaghetti sauce FROM A JAR. I don't remember the last time that happened, probably because it NEVER HAS BEFORE.The last two weeks have been so hectic, we've been dining on a rotating meal plan of canned beans, veggie burgers, packaged salads and pizzas on pre-made crusts. With one notable exception: I did find time to whip up two big batches of seitan cuz we were all out, and last Saturday, we had chicken-fried seitan with all the fixins. (With frozen veggies, as I was too tired to peel anything.)
