      Makes 1 dozen cookiesThese ultra-thin, crisp cookies are a snap to make and have a fortune cookie-inspired flavor. Serve alongside a homemade or purchased fruit salad to increase your fruit servings for the day while still satisfying your sweet tooth.Ingredients :1/2 cup white whole-wheat flour (see Note) or whole-wheat pastry flour (see Note)1/3 cup sugar1/4 cup unsalted butter, melted1/2 teaspoon freshly grated orange zest2 tablespoons orange juice2 teaspoons vanilla extract4 cups prepared citrus fruit salad (see Note)1.       We've been making a lot of veggie crisps lately. I'm particularly partial to the beet crisps. They're really great for a snack with some wine, or to crumble on soup. You asked for easy recipes -- this is it! The kiddies love them too, and I use the minimum of oil so they are not saturated. I actually do them outdoors on the grill element lest the abode have that greasy spoon odour. :)Made parsnip crisps today, to crumble over our carrot soup.Vegetable Crisps1 lb parsnips, peeled (4-5)Pure Virgin Olive oilSea SaltShave the veg of your choice (we've made beets, carrots, parsnips, potatoes, etc.) into wide paper thin slices using a mandolin. Place them on paper towels to absorb the moisture.In a deep saucepan over medium-high heat heat the oil (3 inches). Fry veggies in batches, a few at a time, until light golden and crisp. Remove with a skimmer, drain on paper towel and sprinkle with coarse salt or sea salt. Serve right away with wine, or in lieu of croutons on soup or salad. May b

      Pecan Crisps Recipe 2 cups sugar 3/4 cup very finely chopped pecans 1/3 cup butter or margarine — softened 1 teaspoon vanilla 2 eggs 2 1/4 cups all-purpose flour 2 1/2 teaspoons baking powder 1/4 teaspoon salt Preparation: Heat oven to 375º. Mix sugar and pecans in large bowl; reserve 3/4 cup. Beat butter, vanilla and eggs into remaining sugar mixture with electric mixer on low speed, or mix with spoon. Stir in flour, baking powder and salt. Roll dough into rectangle, 18 × 13 inches, on lightly floured surface. Sprinkle with reserved sugar mixture. Press sugar mixture into dough with rolling pin. Cut dough diagonally every 2 inches in both directions with pastry wheel or knife to form diamonds. Place about 2 inches apart on ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown. Immediately remove from cookie sheet to wire rack.

      For parents needing further reason to stop giving their children crisps or chips every day in their lunch box, here it is. Eating a packet of crisps a day is equal to drinking almost five litres of cooking oil every year. The British Heart Foundation released these figures as it launched the second phase of its Food4Thought campaign ahead of World Heart Day this Sunday. Food4Thought aims to expose the amounts of hidden salt, fat and sugar that lurk within many common snacks, takeaways and ready meals. A recent BHF survey of 8-15 year olds revealed that one in five children munch their way through at least two packets of crisps per day - the equivalent of nine litres of cooking oil a year. Professor Peter Weissberg, BHF Medical Director, said: “The BHF believes having a daily dose of such a high-fat, nutritionally poor product is a threat to children’s long-term health. “Daily unhealthy snacking is a worrying habit.
