We thought we would share some of our favorites with you.Cranberry Coconut BarsThis first recipe, Cranberry Coconut Bars, is more of a big kid cookie-it has too much fruit and too many nuts in it to suit most youngsters. But it so scrumptious and easy, we had to include it. If you are making a lunch for a spouse or a teenager, we think this will be a hit. Of course, it doesn't have to go in a lunch pail. This is a microwave cookie that can be mixed right in the baking pan. How's that for convenience? If you are not fond of dried cranberries, consider substituting dates, raisins, or chopped apricot pieces in this recipe.1/2 cup bu

A Ziploc Bag Full Of Chocolate Chip Cookies.
Yesterday, as I was packing my lunch for work, I threw in a Ziploc bag full of chocolate chip cookies. I had purchased a tub of the soft, silver dollar-sized cookies from the market last week, and thought they would bridge the Hunger Gap between lunch and when I leave for the day. This gap is normally bridged by either a Twix or vending machine egg salad, both of which usually lead to me spending the better part of the afternoon on the toilet.I have a tender tummy.I'm typically a creature of habit when it comes to my meals, but I've been taking strides to not eat out for lunch so much, as it's bankrupting me and making me heart attack-y and chubby (I'm this close to having to buy Medium-sized shirts). I needed to find a way to spice up my lunchtime routine, and the Ziploc bag full of choco

If so, these cheesecakes are for you!Our friends Jeremy and Liane came over for dinner last week, for a revisit to the shrimp tacos. Considering that the dinner could be spicy, I wanted something creamy and luscious for dessert. (And I'd received these adorable dessert cups for my birthday and I wanted to try them out!) I was also tickled to be able to use a tub of mascarpone from the dairy lady at my local farmer's market. (I'll try to get her name next time... although, the Dairy Lady has a nice ring to it!) Mascarpone is like an Italian cream cheese, and figures prominently in tiramisu. If you can't find any (or if it's marked up something c

      Thumbprint Cookies with Jam
Baking cookies is the best way to placate yourself and your kids, and for me, its also a favorite passtime! What I love about cookies is that they can be simple and festive at the same time. I had my eyes on Cenk's thumbprint cookies since a long time. The mere sight of these colorful cookies was enough to motivate me to make my own Jam Thumbprint Cookies. The name 'thumbprint' comes from the fact that you use your "thumb" to make an indentation into each ball of dough which is then filled with some jam. The best part is that these tiny delights are very easy to make and extremely versatile. Just follow the basic recipe and use your choice of fruit flavors or even chocolate as a filling. No matter what's the occasion, they are sure to be a hit!I made mine with walnut flour and mixed-fruit

      Girl Scout Cookies
Just like Candy Bar Season, I've decided to compete with the parents by selling Oreo cookies. That's right. And not just ordinary Oreo cookies. But Double Stuff Oreo cookies. Tefft immediately ran into my office when she heard the news and offered two boxes of Samoas for one package of Oreos. Her kid would be taking another loss.  Mulhausen stopped at my office door with a couple of boxes of thin mints in hand and his mouth open ready to pitch me on helping support his daughter's pack or squad or coven or whatever they call themselves; then he saw the stack of Oreos on my desk for sale for $4.00 per package. I was making about a $1.25 AND still selling cheaper than the Girl Scout cookies. Mulhausen grunted and went over to Tefft's office where he would again be disappointed. Don't get

Oooooooooooh...for a nut which is not quite popular or as visible as pecans or walnuts, I'm amazed at the potential it has! This cookie tasted great; very nice indeed. I've also seen some great pistachio panna cottas on the net. Another delightful thing about pistachios is the visual appeal. They add a burst of colour to whatever they are added to, more so as a garnish. I'm so glad I've discovered these pretty nuts...Chocolate-chip Pistachio CookiesIngredients:Butter - 1/2 cu

How to Make the Best No-Bake Cookies
No-bake cookies are very easy to make, and are a fabulous first recipe to get your kids started in the kitchen. But there are some secrets to making the best cookies.* Assemble all of the ingredients before you begin. In fact, measure all of the ingredients before you start cooking. These recipes go together fast. When you're adding ingredients to hot syrups and melted mixtures, you don't want to stop to measure, because the recipe can be ruined.* Be sure that the sugar is completely dissolved before you add the thickening ingredients (peanut butter, cereal, chocolate). Most no-bake cookies start with a sugar syrup. If the sugar isn't completely dissolved, the cookies will be grainy. Scoop up a bit of the syrup in a metal spoon and look at it carefully. You shouldn't be able to see any cry

      Pressed Glass Sugar Cookies
For years I struggled to find the perfect sugar cookie. I think what I was basing it on was a cookie I used to get at our local bakery in my hometown when I was about 10 years old. Considering the bakery only stayed in business about a year or two, I didn't get to have them very long but they've always remained in my memory. In my quest for the perfect cookie I've tried many recipes and I'm always, consistently on the look out for more. When I talked to my Grandma about what I was looking for in a cookie about 10 years ago she told me to look for one made with oil. This recipe uses both butter and oil and a mixture of the two white sugars as well. I couldn't wait to add it to my collection. I hope you do too!Pressed Glass Sugar Cookies1 c powdered sugar1 c sugar1 c butter, softened1

      Spritz Cookies
Spritz Cookies are wonderfully versatile. When you want to make it look like you've made different cookies, when you really made just one, make a batch of Spritz cookies in different shapes. I used a cookie press for the first time (deprived childhood right?) and it was harder that I thought. Several shapes just did not work, but I managed to salvage a few so I could make more variations, again, we're trying to make it look like different cookies. If you have some that are close enough in size and shape, you can put some jam or preserves in between and make a cookie sandwich. You can get several different colors this way, with apricot, raspberry, lemon, blueberry, etc. I also did chocolate sandwiches. You can also add some food coloring to the dough to make different colors of spritz cookies

      Lime Melt-Away Cookies
Last Christmas I added a new cookie to my list of 20-something recipes to make for cookie gifts to friends, teachers and neighbors. It was a lime sandwich cookie that was really quite remarkable. Because the light green color at Christmas time invokes thoughts of 'mint' I think people were surprised to find they munched into a refreshing lime cookie instead. I think pastel green, lime and refreshing citrus tastes go best on warm sunny Spring days or hot summer days and when I saw this cookie from Martha I knew exactly how it would taste when it hit my tongue. Cake Mix Cookies - II
Yesterday I made Chocolate Chocolate Chunk cookies. I've already made (and raved) about this style cookie on my site a couple of times, as I've made these in a lemon version, white vanilla version and chocolate as well. However this version uses 2 eggs and a bit of brown sugar in the recipe. In the end, it was a yummy cookie and quite moist, but I hesitate to tell you that you must include the extra brown sugar. I don't really feel it is needed. If I make these again I think I'll leave that part out as it really didn't add anything to the end product. 1 cake mix1/3 c canola oil2 eggs2 T brown sugar1 t vanilla1 package chocolate chunksMix the cake mix, oil, eggs, sugar, vanilla. Anyone have one of those magic de-Stressing gizmadgets? How about a bag of cookies? No?
My work has been a bit stressful over the last few months, and it is coming to a head right now. This is significant from a diet perspective in one particular respect: In the past, this would have been a likely "beginning of the end" of a diet plan. But this time, since I'm simply approaching weight loss from a "steady as she goes" adjustment of my diet, I'm very interested to see how I deal with the pressure. I wrote an article about it over at AlmostFit today, and shared some link love with some of the blogs that I'm finding particularly inspiring right now. Here's an excerpt: In my history with maintaining a weight loss program, the single greatest contributor to failure has always been one thing: Stress. I am decidedly an emotional eater with a particular susceptibility to stress; i

Will they guffaw and not even try them?I've been making my own Caramel D'lites, Thin Mints and Twix cookies for about 15 years now. I also make Salted Nut Rolls but they are such a messy pain in the back side that I figure it's worthwhile to buy them if I'm craving them... LOL. But as for the mint cookies? Here you go.
