As much as I love the traditional pancakes, I have always wondered what would pancakes be like if it contained the ingredient of cinnamon and had a topping of dulce de leche....

'Almost' Sugar Free Cinnamon Swirl Coffee Cake
I'm trying to make up for not posting as many low-sugar or sugar-free recipes as I had hoped before this Easter holiday weekend. Time has managed to get away from me and although we regularly cook and bake with lower sugar or even low-carb dishes, I find that I have the photos stuck inside my computer and I never get the time to post them as I intend! LOL. I'm hoping (?) that once we get through Easter and Spring vacation, Prom and Track season that life will slow down a tiny bit. And yes, I'm just shaking my head at the absurdity of what I just wrote. LOL.Never-the-less here is another yummy Splenda recipe that I've collected as I am signed up with them to receive their monthly emails. If you need a quick dessert, give it a go!Cinnamon Swirl CoffeecakeServes: 16Preparation Time: 20

Troubleshooting Cinnamon RollsOr the flattening of my dough and ego
Sometimes it is said, “Love means never having to say you are sorry.” Whoever said that is a chump. In my book, love means being ready to admit to the litany of your mistakes, most of which originate from being stubborn, pigheaded, and/or egotistical. Love means standing up and being willing to admit when you were wrong. And so, dear readers, because I love you, I am here to admit that I was

      Cinnamon Rules
I have nothing against the Poppin’ Fresh Doughboy. Back in the days when I was all about convenience, I made all sorts of dishes employing the vaguely chemical-flavored “Grands” as either crust or topping, and I admit that I still use their ready-to-use pie crust from time to time. Despite distancing myself somewhat from [...]

Recipe: Green Beans with Cinnamon & Breadcrumbs
Simple and quick, this method of dealing with Beans gives them an extra dimension and sufficient heft to punch in the same weight as a strongly-flavoured beef stew, say, or roast venison. And I defy anybody to be able to identify that the spice in play is Cinnamon - far removed from any dessert connotation, used this way it has a rather muscular, four-square quality that is as much a shape in the mouth as a flavour on the tongue. For Four, as a side serving.Ingredients: 300g Green Beans; 50g Butter; 2 tablespoons fine Breadcrumbs (I use Leimer brand, but home-made would be ok, too - as long as they aren't too large); half a teaspoon ground Cinnamon; Salt.Method:1. Cook the Beans in the normal way, in boiling salted water for 7-10 minutes, until they are al dente. (Don't let them cook t

      Christmas Cinnamon Rolls
Let’s just get one thing straight. Is there anything more delightfully, sinfully, homey than warm home-made cinnamon rolls? I think not. They are, perhaps, the perfect vehicle for food-induced nostalgia (and are my contribution to Food for Thought). In fact, I had been doing a lot of thinking about cinnamon rolls in the weeks leading up to Christmas. Growing up, my mom often made cinnamon rolls

      Starbuck's Chocolate-Cinnamon Bread
I must be last person on earth to bake this cake. (Hey better late than never right?) If you “Google” Starbucks’s Chocolate Cinnamon Bread you’ll find that, many bloggers have already baked and devoured this cake.It may look like a chocolate pound cake, but that’s where the similarities end. The cake’s texture is light and devilishly chocolate. It’s made with buttermilk which gives the cake its tender crumb and the dark dutch cocoa would please any chocolate lover. The cake has a hint of cinnamon, okay a tad more than hint, but the dark dutch cocoa keeps the cinnamon from over powering the cake. The crunchy sugar topping has a touch of cloves, which brings a nice warmth to the cake. The cake recipe makes two generous loaves. Really generous. I gave one loaf to my friend

      My Cinnamon Rolls
Here are a few samples of my mini cinnamon rolls that I made a few nights ago as a trial for my brother's wedding. They are yummy - secret recipe =)Iced and ready to go to school!A close up!Just before icing them! The cupcake paper I put each one in.It's amazing, one batch of dough makes 12 large cinnamon rolls, or 32 (possibly 40) mini ones. I can't believe that I can squeeze three to four times more out of one batch if I make mini ones! I'm hooked and probably won't make big ones again for a while! Mini are the way to make way more people happy!

      Christmas Cookies: Cinnamon-Chocolate Swirls
Now home-baked cookies and I have a history of sorts. I developed an avid interest in baked goodies early on, and as time went by it turned into a passion of sorts. Yes, there's always a time for a story and this is one for Christmas cookies. As I stumbled across Susan's Christmas Cookies from Around the World 2007, I was inspired to dig out my old faithful - a treasured recipe book which holds a collection of my very favourite tried and trusted cookie recipes. Just a turn of the page and memories of baking batches of cookies for school events, for family, friends all came flooding back. Just as much as I loved the aroma of my Mum's kitchen every time I loaded in a fresh batch to bake, the fact remains that I really have not had the time or the opportunity to indulge in this joy for sever

      SPICY CINNAMON SHORTBREAD...Think Spice Cinnamon!
"Cooking is like love. It should be entered into with abandon or not at all."Harriet van HorneSPICY CINNAMON SHORTBREADThis is a sweet & spicy shortbread, not the traditional sort, because I made it with brown sugar that gave it a very different texture. In addition, I went further and sprinkled the tops with a mix of brown sugar & cinnamon before baking, which enhanced the flavour of cinnamon! Flowers on stars!!I love the 'Think Spice' monthly event at Sunita's World. It does make you put on your thinking cap, and actually think the spice...at least with me it does! Can you imagine...I been thinking 'Cinnamon', her spice of choice for December '07, ever since I read her post. I madly tried to stick a stick of cinnamon into anything & everything, but wasn't quite there. This spicy cinnamon 'shortbread of sorts', which is my own creation, finally did it! Cinnamon Rice Pudding
When I was little, I knew Christmas was near when my mom's rice pudding made an appearance. It would first appear at Thanksgiving and continue until New Years Day. My mom would give me a cup of hot pudding, yes …hot, because I couldn't wait for it to cool down. It was the perfect combination of cream and cinnamon. For the grown ups, she would soak the raisins in hot water and dark Meyer's Rum. Either way it was a real Christmas treat. Getting the recipe was not a treat. When I asked for the recipe, she gladly sent it. Arborio rice, cinnamon stick, cinnamon, vanilla bean, skim milk, heavy cream, sugar. That's how she sent the recipe. (Agh!) Now, I'm calling long distance to Florida. I ask her …how much rice? Her response: "handful". "Mom, I'm 5 feet tall with small hands, you're 5'11 with larger hands.” "…Oh” she says. We chat as she searches for measuring utensils. Finally, she finds a liquid measuring cup. I sigh and say ok, use it. She starts to measur

Peas Pilaf With Raisins and Cinnamon( Endu Draksha Pachi Batani Pulao )
Simplicity at its best, peas and raisins did wonders to this rice pilaf! This simple rice dish largely depends on petite peas, raisins, cinnamon, ginger and garlic to deliver that big flavor! This rice pilaf is a perfect display for simple yet flavorful Indian Cooking. Raisins and Cashewnuts paired nicely with this spiced rice pilaf, which added to the surprise sweet bites balancing the spices.I made this for the first time when i had a pot luck at my work place, i remember last year i made our regular vegetable biriyani with the store bought biriyani masala and i swear everyone where literally asking ' how do you people eat this spciy food everyday?', and you know what i really didnt add any green chillies and added very less masala than usual. But this time my peas and rice pilaf dish is a winner at my work, 99% of them being non indians, i wanted to keep it low on spicyness, yet wanted them to learn that Indian cooking is not just spicy, its packed with flavor from the spice

Homemade Cinnamon Rolls from the Bread Machine
I have posted my typical cinnamon roll recipe on this site in the past along with a photo, just to make your mouth water, LOL. However, I've been intrigued by the recipes that use a pudding mix in the dough and not just in the filling. I found this recipe and liked that it used a bread machine to knead the dough as well as using the vanilla pudding in the dough. Frosted Cinnamon Rolls 1 cup

      cinnamon toast
It seems most memories of grandmothers include hours spent in the kitchen, secret ingredients, and recipes handed down in a hush. Having been raised by my grandparents, you'd think I’d be brimming with kitchen tales and secret techniques, but the truth is, my grandmother couldn’t cook. The youngest of more than a dozen children, she went to college when very few girls did and studied to be an accountant when society (and her own family) told her she couldn’t. Despite having a successful husband, she was the bread-winner and wore the pants, which didn’t leave a lot of time for other grandmotherly pursuits like knitting and baking. If you needed help with your taxes, you could always count on gran, but if it was a cake in question, she was the first to grab the keys and shuffle into the car to buy one. A domestic goddess in her own right – you could literally eat off of our floors – often regaling me with stories of her own mother’s cooking in between working full time, kee
