      Candy Review: D'asse Chocolates
      We were going to just mention D’asse because of its odd name, but I was most amused when I actually found a box to taste! This is why I love living in a neighborhood with some great Asian supermarkets. You never know what gems you might find - and at $2 for a box, this one was a bargain! Strictly speaking, D’asses is not really a chocolate or a candy. Made by the Crown company in Korea, it’s two very thin, airy wafers which sandwich a thin layer of flavored cream. I picked up a coffee flavored version and it was awesome. Lovely texture, nice coffee-ish flavor without being overbearing, and truly delicious. The only drawback is the packaging - like a lot of Asian products, the D’asses are separately wrapped in foil envelopes, complete with diagram on how to open it. Every time I opened one (following said instructions) I managed to break the D’asses into several pieces. While there are several times in my life when I’ve wanted to knock off a piece

They’re located in Berkley, California where they produce all their extremely tasty confections. I met the founder and head chocolatier at the Chocolate Show, Chuck Siegel, who is an extremely enthusiastic and committed fellow. He loves to create chocolate and sweets and you can taste it in his work. While at the show I was able to taste only some of what Charles Chocolates has to offer.       Candy Review: Dove’s “Extra” Dark and Single Origin Chocolates
      With all the buzz about the increasing health benefits of dark chocolate recently, it’s only natural that the big guys cash in on the trend. Mars, which owns the fast growing brand Dove, has released new bars that cover the dark chocolate and single origin trends. A few things to note before I move onto how they taste. Firstly, in order for a chocolate to be called “dark” here in the United States, it has to have at least 35% cocoa solids. So, as Dove sees it, if 35% is dark then 63% must be extra dark. I wonder who they think they’re fooling. Secondly, the “single origin” beans they’re using come from the Forastero cacao bean. Forastero is the least flavorful cacao bean there is and it’s used more for bulk processing of chocolate. So right away, I’m skeptical of this line of chocolate.       I was recently sent a box full of treats from Sweet Earth Chocolates, a California-based chocolate company that prides itself on selling organic, fair-trade treats.       Hace unos días visitaba el excelente blog de Erruki ,como hago con relativa frecuencia ya que es uno de mis blogs favoritos, y me topé de narices con este simple y delicioso pastel de chocolate, mi perdición que es la base de esta receta.Dicho pastel lo complementé con dos nuevas texturas de chocolates distintos para realzar, si cabe, su exquisitez.Ingredientes:250 g de chocolate al 70% de cacao160 g de mantequilla; mitad salada, mitad normal140 g de azúcar4 huevosEstas cantidades son para un molde de 25x16 cm. Yo lo he hecho en moldes individuales.Instrucciones: Fundir el chocolate y la mantequilla al baño maría.       Candy Review: Chocolates from Ms. Chocolate
      A long while back, I reviewed some wonderful chocolate covered blueberries from Chocolate Moon. Unfortunately, the company went out of business. Recently I received an email from Ms. Chocolate who said she now makes chocolate covered blueberries as good or better than the Chocolate Moon blueberries. So, she sent me some and also sent me some chocolate covered apricots and cherries and also cocoa almonds and toffee almonds. The fruits are all dried before being coated in chocolate and a coating of colored, fruity, chocolatey candy. In a word, all the candy was fantastic. Let’s look at each individually: Chocolate Covered Blueberries: These are wonderful. They are truly delicious. The ratio of chocolate to blueberry is just perfect. I could easily eat a whole bag of these in one sitting. For comparison, I tried out some Harry and David chocolate covered blueberries and they were nothing compared to Ms. Chocolate’s.
