      Chocolate Cupcakes with Orange Cream Sauce (For St.Patrick's Day)
      St.Patricks's Day is around the corner, and most of the lucky ones are going to enjoy a 3-day weekend in the US! St.Paddy, as he's lovingly called, is supposed to have been responsible for a lot of miracles, and of course, spreading of Christianity in Ireland (though he was born in Britain). March 17th is celebrated worldwide by Irish people and non-Irish too (mainly in Australia, North America, and Ireland) as an annual Feast Day to celebrate the essence of the bishop St. Patrick. Celebrations, including food, are themed around all things Irish, which means anything that is green or orange, and contains a lot of booze!!       Classic Milk Chocolate Cupcakes
      Wow! This is one of those go to recipes. As I handed out the cupcakes I noticed that everyone was licking off the icing first and then eating the cake. Yes, the icing is that good. Everyone commented on how they could eat the icing with a spoon and be utterly content. So, the next time you need a batch of cupcakes, remember that is your go to recipe and enjoy!I filled the cupcakes 2/3 full (makes 24- 28 cupcakes) and baked for 20-25 minutes.I was able to get 28 evenly flat cupcakes, but if you like your cupcakes with a round top then 24 is your magic number.

      Chocolate Cupcakes - Happy Birthday Anson!
      Happy Birthday to my big brother Anson!! Chocolate Cupcakes 1 1/2 cups all-purpose flour 1 1/2 teaspoons baking powder 1/4 cup cocoa powder 1/2 teaspoon salt 1/2 cup milk 1/2 teaspoon vanilla extract 1/2 cup unsalted butter 3/4 cup sugar 2 large eggs Preheat oven to 180 degrees Celscius line 12 cup muffin tin. In a small bowl, whisk together flour, baking powder, cocoa powder and salt; set aside. Mix milk and vanilla; set aside. In a large bowl beat butter and sugar until light and fluffy for 3 to 4 minutes. Add eggs one at a time, beating well after each addition. With mixer on low speed, add half of dry ingredients, followed by milk-vanilla mixture, then remaining dry ingredients. Divide batter evenly among prepared muffin cups. Bake until a toothpick inserted in center of a cupcake comes out clean, about 20 to 25 minutes. Cool cupcakes 5 minutes in tin, then remove and cool completely on a rack.

      Chocolate Cupcakes with Cherry Frosting
      A treat for the boys for when they get home.Homemade chocolate cupcakes with fluffy cherry icing.Happy Thursday! Chocolate Cupcakesfrom Recipezaar1 1/2 cups flour1 cup granulated sugar1 teaspoon baking soda1teaspoon salt1/3 cup cocoa powder1/2 cup oil1 cup water1 teaspoon vanilla extract1 tablespoon vinegarMix all ingredients together until moist and well blended.Put in cupcake cups and bake for 20-25 minutes at 350 degrees F. Cool on a wire rack. Cherry Frosting for Cupcakes1 (9 ounce) container frozen whipped topping, thawed2 tablespoons maraschino cherry juice1/2 teaspoon unflavored gelatine1-2 drops red food colring (optional)Sprinkle gelatine into juice to soften.       Chocolate Cupcakes with Peanut Butter Frosting
      These little yummies are addicting! I wanted sweet cupcakes today and was searching through my cupboards and remembered I had a huge container of peanut butter. So I made a batch of peanut butter frosting and my old fashioned chocolate cupcakes.They turned out really good.The peanut butter frosting has just the right amount of sweetness.
