So right now it's the morning after the Justin Timberlake concert that was held in the Tacoma Dome. We needed some brunch and since we were on a Mexican theme we ended up at a Chipotle Mexican Grill! All I can say is you guys down south sure are lucky to have such tantalizing Mexican cuisine at your fingertips--I'm jealous!Most Chipotle restaurants are built with sustainable architecture in mind, to help minimize the impact on the environment. Good on them. Evidence of this was their recycling of all plastic waste (reminds me of Korea's recycling initiatives).First things first when you enter a Chipotle is to choose your poison--what you want to eat that is. Cook until sugar is melted. Add chipotle chili. Puree in blender.
Strain through a fine mesh. Delicious with Zuni Rolls.

1chipotle chile in adobo — minced
2 teaspoons adobo sauce
4 teaspoons brown sugar
2 tablespoons lime juice
2 tablespoons chipped fresh cilantro leaves — chopped

2 tablespoons vegetable oil
1 1/2 pounds extra-large shrimp (21 to 25 per pound) — peeled and
deveined
1/4 teaspoons salt
1/4 teaspoons ground black pepper
1/8 teaspoons sugar
The cooking times below are for extra-large shrimp (there are 21 to
25 in one pound). If this size is not available in your market, buy
large shrimpthe next size downand adjust the cooking time slightly.
Either a nonstick or a traditional skillet will work for this recipe,
but a nonstick simplified cleanup.
Make the Glaze: In a small bowl, combine the glaze ingredients and
stir to mix. Set aside.
Heat 1 tablespoon of the oil in a 12-inch skillet over high heat
until smoking. Meanwhile, toss the shrimp, salt, pepper, and sugar in
a medium bowl. Add half of the shrimp to the pan in a single layer
and cook until spotty
1 dozen large oysters
oil, to cook
1 small minced red onion
1/2 tablespoon chipotle puree
2 ripe roma tomatoes
1 tablespoon rice vinegar
salt and black pepper to taste
On a hot grill, place the oysters and grill until they open, 5 to 8
minutes. In a saucepan coated lightly with oil, caramelize the onions,
about 3 minutes, then add the chipotle and tomatoes. Add vinegar and
season. When the oysters open, be careful not to spill out the liquor, and
top with warm salsa. Serve on a bed of fresh seaweed.
This one uses the Chipotle Tabasco I talked about in an earlier post. Yum! Lime and tabasco are two of my husbands favorites!
Grilled Chicken with Chipotle and Lime
1/4 cup fresh lime juice
1/4 cup olive oil
2 1/2 tablespoons chipotle Tabasco
3/4 teaspoon salt
6 large skinless boneless chicken thighs (2 1/2 lb total)
2 teaspoons mild honey
Stir together lime juice, oil, Tabasco, and salt

I’m sitting at my computer, the memory of this meal fresh in my mind and I find that I am unable to come up with some type of glorious adjectives to rightly describe what this tasted like. I don’t often find that I am speechless when it comes to the food I make; more often than not I can’t shut up about it to a point where my listeners eyes glaze over, they start examining their fingernails or split ends with amazing intensity or suddenly jump up exclaiming “Is that the phone I hear?” and rush off quickly. I guess some people just aren’t as passionnate about food as I am. I forgive them.
