      Chipotle and the Immokalee Workers
This makes me sad. I like Chipotle. A lot. They have an excellent vegetarian fajita burrito, and they use fresh ingredients and get their meat from ethically treated animals. Yet it seems that their "food with integrity" motto is more public relations spin than actual reality: Chipotle Hypocrisy:In recent years, Taco Bell and Burger King have foolishly resisted efforts by activists to margina

      Chipotle Lime Bacon-Wrapped Shrimp Recipe
When I put the call out a few weeks ago for July 4th grilling suggestions, Simply Recipes reader Chuck mentioned bacon-wrapped shrimp. I'm sure this is a standard fare for many of you, but I can't remember ever eating bacon-wrapped shrimp, let alone making it. But boy, it sounds good, doesn't it? Wonderfully indulgent. You actually don't need anything beyond some good quality jumbo shrimp and baco

Chipotle Chicken Pasta Salad with Avocado
The pasta salad can be a thing of beauty or a complete failure. I have made both and I have had both. The pasta salads that are served at the cafeteria where I work are consistently bland, dry, and with overcooked mushy noodles. What’s worse is that they charge for them by the ounce!!! So I pay $5 for what amounts to little more than a side dish serving of what masquerades as pasta sala

Though shrimp is higher in cholesterol than most meat and poultry, it’s lower in fat and saturated fat. And fat, not cholesterol, has the greatest effect on blood cholesterol. Shrimp also has omega-3 fatty acids, a type of fat that’s good for your heart. 2/3 cup dried chickpeas (garbanzos), picked over and rinsed, soaked overnight, and [...]

Ode To A Burrito -- Chipotle Mexican Grill -- Humane Meat | Fast Company
Fancy that - a fast food restaurant that cares about humane raised meat. Now if only Chipotle CEO Steve Ells can inculcate that philosophy throughout his parent company (McDonalds) and, by extension, drive a humane-raised ethos through the fast food industry! If I hadn't given up meat and if I weren't currently on a diet, I'd be out there happily munching through a 1,000+ calorie Chipotle burrito RIGHT NOW (because let's face it - they're GOOD, and if you're going to eat meat, eat HAPPY meat). Read this article here: Ode To A Burrito -- Chipotle Mexican Grill -- Humane Meat | Fast Company Meat eaters! Insist that those happy meals are made from happy animals! Support Chipotle! La Gringa's Chipotle Butternut Squash Soup
Chipotle butternut squash soup with herbed wheat breadCalabaza is the general Spanish word for winter squash. Butternut squash are called ayote here in La Ceiba, but apparently other types of squash are also called ayote as well.Just after we moved into the house here in La Ceiba, Honduras, and before we started landscaping, we had a bumper crop of butternut squash. We had some huge compost piles working in the back yard and as a result of tossing in our kitchen scraps, the compost piles sprouted chiles, tomatoes, papaya trees, and butternut squash. It might have been my best garden ever. ;-) The vines, as squash vines will do, tried to take over the earth. We ended up with probably 100 squash. We gave some to family and the few workers we had a the time, gave some to Carlos to sell at the

      Chipotle Chicken Tacos
This might not be the best photo in the world... You're lucky you have a photo at all, actually. I'd piled my toppings on these babies and was headed out the door when the little quiet voice in my head said, "Take a picture, fool!!"... so I tried to push some of the lettuce and cilantro out of the way so you could see the actual filling... O well. Just trust me that there is some tasty chicken, pepper jack cheese and sour cream under all that greenery.Photo snapped, I proceeded to join the hubs in front of the tv (football was on!!!). I took a bite, looked at him and said, "Dif if dewifuff!!!!" (yes, Mom, my mouth was full.) Seriously dewifuff. The filling was nice and spicy, but the cool, creamy sour cream cut it so that it was the right amount of hot. (Meaning, it didn't make me cry this time!) Now, I did mess with it a little. (Big surprise.) Rather than add the can of diced tomatoes, I used an already-opened jar of salsa. Same difference, I thought. The salsa was "chipotle" flav

I Won 10 Free Chipotle Burritos!
Yesterday I got a call from a number I didn’t recognize. I usually don’t pick up but I did this time and the person started with “you’ve won….” and i was about to hang up until i heard her say “burritos!”. I was intrigued. So it turns out earlier in the week, I put my business card into their weekly drawing for free burritos and I won! 10 free chipotle burritos. So I’ll be there for lunch today..and dinner tonight…and lunch tomorrow, and dinner tomorrow and lunch…. I’ve always just thrown my business card into any contest I can find. So far I’m a two-time winner. A few years ago, I won a Baja Fresh Party Package and that was enough food to feed a family for a few days. So ever since then, everytime I see a contest like that, I just toss in my card. I know that if I don’t win, my card just get discarded so I found a place that gives me free business cards. My First Chipotle Mexican Grill Experience
So right now it's the morning after the Justin Timberlake concert that was held in the Tacoma Dome. We needed some brunch and since we were on a Mexican theme we ended up at a Chipotle Mexican Grill! All I can say is you guys down south sure are lucky to have such tantalizing Mexican cuisine at your fingertips--I'm jealous! Most Chipotle restaurants are built with sustainable architecture in mind, to help minimize the impact on the environment. Good on them. Evidence of this was their recycling of all plastic waste (reminds me of Korea's recycling initiatives).First things first when you enter a Chipotle is to choose your poison--what you want to eat that is. You choose what you want and as you go along the worker there just loads up your selection of an assortment of fresh ingredients. We ordered a burrito with shredded beef (Barbacoa), cilantro-lime rice, re-fried black beans, fresh tomato salsa, sour cream, and cheese, Their burritos are HUGE...this is half of one that I split with

Chipotle Orange Turkey Burgers with Lime Cream
I’m sitting at my computer, the memory of this meal fresh in my mind and I find that I am unable to come up with some type of glorious adjectives to rightly describe what this tasted like. I don’t often find that I am speechless when it comes to the food I make; more often than not I can’t shut up about it to a point where my listeners eyes glaze over, they start examining their fingernails or split ends with amazing intensity or suddenly jump up exclaiming “Is that the phone I hear?” and rush off quickly. I guess some people just aren’t as passionnate about food as I am. I forgive them. These burgers are incredible. The orange juice and brown sugar in the recipe makes for fabulous caramelization on the meat and the flavor was outrageous!! They were so good that Mike and I each had one, then split another just to taste it again. Yup, we are just a bit crazy for our food- you get no argument from me on that. Corporate Responsibility: Chipotle’s Food With Integrity
Corporate Responsibility Monday’s seeks to inform you about the corporations from which you consume. I’ll be highlighting a company that seems to be getting the Responsibility part right, and my partner in this Tag Team endeavor, Josh, will be highlighting a company that seems to be slacking on it’s responsibility. The goal always is to inform you, and hopefully to encourage you to make choices with your lifestyle and purchases that are more inline with your ethics then you currently are. This week, we’re talking about fast food. Be sure to check out Josh’s post on an irresponsible company (and no it’s not the golden arches, you already know not to eat there). Chipotle’s Food With IntegrityTheir website explains it well: “Food With Integrity” isn’t a marketing slogan. It’s not a product line of natural and organic foods. And it’s not a corporate initiative that will ever be finished or set aside to make room for o
