      Cheeseburger Meatloaf
      Serves 82 lb. lean ground beef3/4 C. fresh bread crumbs1/2 C. minced onion2 eggs beaten1 1/2 tsp. salt1 1/2 tsp. ground black pepper3 C. shredded cheddar cheeseketchupprepared mustarddill picklesPreheat oven to 350F. In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese and pickles over the meat, leaving a 3/4-inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish. Cover with ketchup and mustard. Bake in the preheated oven 1 hour, or until internal temperature reaches 160F. Let rest for 10 minutes before serving.

      Well, 3 girls in one of my best classes have Birthdays in June. So of course that means cheeseburgers must be consumed. My staunch belief that every kid loves cheeseburgers seems to hold water.       Today's events took a different turn than planned, and I so it was that I decided to drive our house guests, Sherry and Jim, to Lahaina for dining and shopping. Jim was wearing his Cheeswburger In Paradise t-shirt from Key West, Florida--it was well-loved and well-worn with a small hole near the neckline. I decided it was a time to add to his CIP wardrobe, so I suggested we eat at the Lahaina Cheeseburger in Paradise which sits right on the water.The fresh ocean breeze blew on us as we dined on delicious hamburgers. On the menu there was a special: you could buy a t-shirt which was wrapped up to look like a hamburger with your burger, so Jim went for it. I will let the photos tell the rest of the story. The final result you will have to tune back in for on another post, but here's the beginning!
