My friend Lily is moving away so I had to send her off with a treat. I love mini cupcakes and I love giving mini cupcakes. Until now all that has failed... I think the US failed on that front because the Syrian are convinced that the US can only do the talking but not the acting, especially in few of the Iraqi quagmire the US is struggling with in Iraq –although the surge seems to be working-. Therefore sending a couple of warships to sail close by the Lebanese-Syrian shores is a step in the right direction. But, and I stress, it is only one step! This is another one of those recipes that I've wanted to make for a long time, but have somehow never got around to it. Carrot-Molasses Cookies Recipe
1 package carrot cake mix
1/4 cup butter or margarine — softened
2 tablespoons light molasses
2 eggs
1/2 cup chopped nuts, if desired
1 tub Rich & Creamy cream cheese
ready-to-spread frosting, if desired
Preparation:
Beat half of the cake mix (dry), the butter, molasses and eggs in large bowl with electric mixer on medium speed until smooth, or mix with spoon. Stir in remaining cake mix and the nuts. Refrigerate about 2 hours or until chilled.
Heat oven to 375º. Lightly grease cookie sheet. Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet. Bake 8 to 10 minutes or until edges are set (centers will be soft). Remove from cookie sheet to wire rack. Cool completely. Frost with frosting. (Cover and refrigerate any remaining frosting.)

So, how do you turn a Radish to a Carrot? Well, you dip it in curry! *bleh*My son loves Japanese Curry and since we haven't had that for a long time (it meant my hubby had not went away for business trip for a while too), I thought I'll just cook that. I came out with this silly riddle to ask my son. Guess what he said. "You didn't make the Radish long enough lah. Don't look like Radish cannot guess." *duh*After he took a bite, he told me, his carrot (he had dipped it in his curry) had turned into an egg. I was a little confused till he said, "See, that's egg yolk I'm eating!" Hahaha! He was referring to the meat ball I stuffed inside the 'Radish-Carrot'. Wah, that gives me another idea for his next meal! Great!In case you are wondering what the Radish was, it was meat ball, which was a combination of minced pork, fish paste and chopped Broccoli, shaped into a ball, stuffed into a rice ball and topped with blanched Broccoli. Actually, this is not one of my favourite dishes because I am not too partial over turnips. But it is quite frequently cooked by mum and I remembered I used to have Stir-Fried Turnip with Carrot and Dried Prawns often for lunch (with plain porridge) during school days.
It is, however, a very simple recipe to cook and relatively cheap as well. You probably won’t need a whole turnip unless you are cooking for a few people in one go. The dish tastes a blend of sweetish and salty with a hint of dried prawns which can be fragrant to some but offensive to those who are unaccustomed to this ingredient. You can actually use dried cuttlefish strips in replacement of or in addition to the dried prawns. (more…)
