      We are on a detox in our house after a weekend of stuffing faces with oversized chocolate eggs and All-You-Can-Eat Chinese meals. So the meal for today is spicy and sour cabbage soup. It is loosely based on the flavours of some Thai or Chinese style soups, for example Tom Yam but really its just a home made combination of flavours from Asia. The resulting soup was very spicy and warming, perfect for cold days, and for detoxing and diets too (it is pretty low in calories).I am not sure exactly how much stock was added, it was enough to cover the cabbage in the pan but not so much that it makes for a really sloppy soup.       1-4½ pound corned beef brisket4 allspice berries2 bay leaves1 teaspoon mustard seeds1 onion, quartered 1 bulb garlic, cut crosswise so each clove is cut in half1 teaspoon black peppercorns1 whole clove, optional1 medium head cabbage, cut into eighths1½ pounds small (about 1-inch diameter) red potoatoesRinse corned beef under running water. Place in large pot. Add allspice, bay leaves, mustard seeds, onion, peppercorns, and clove. Add enough water to cover. Bring to a boil, skim any scum if needed. Reduce to a simmer and cover. Cook about 4 hours, or until fork-tender. Remove and keep warm. Strain out spices and vegetables from cooking water. Add cabbage and potatoes. Bring to a boil and reduce to a simmer. Cook 30 minutes until fork tender. Cut against the grain or it will be tough.

      Defrost a pack curly cabbage and 5 sheets of puff pastry. Chop 200g mature cheese in little dices. Crush 150g cashewnuts andd add it to the cheese. Put in another bowl 125ml cream, a teaspoon thyme, a tablespoon mustard and a pinch of salt. Stir well. Also add gradually 3 eggs to the cream while stirring. Dress a pie form with the puff pastry sheets. Mix the curly cabbage with the cheese and cashew nut mixture and the cream egg mixture. Transfer this to the pie form. Place the pie form in a preheated oven at 200c for about 45 minutes. Let it cool down for 5 minutes before eating! Enjoy!       Curly Cabbage with Potatoes and Smoked Sausage
      Maybe really Dutch, I don’t know… But I really like it with this kind of weather. Cook about 750g peeled potatoes for about 20 minutes or until done in boiling water with a pinch of salt. After 5 minutes of cooking place the smoked sausage on top of the potatoes to heat the sausage. Melt in a pan a knob of butter and slowly heat the 450g deep frosted curly cabbage on medium heat. Drain the potatoes and add the curly cabbage. Combine the potatoes and curly cabbage with a masher. Cut the smoked sausage and serve! To make it even more Dutch make some gravy with it! Enjoy!       This is a birthday card that I've made for a friend of mine. It's a rather simple card as compared to some of my cards. I've stamped on almost every piece of papers that I used here. To add some softness to it, I've added a strip of ribbon on it. I've created a cabbage flower for this card. (Refer to "Create you own Cabbage Flower" in my tips and tricks section) It is attached using some foam adhesives to give some dimensions to the card.

      Pensylvania Dutch Red Cabbage
      When I was growing up, I lived in a small town in Pennsylvania for a few years.  I can remember my Dad taking us all out to eat at a homestyle Amish restaurant on several occasions.  Those meals linger in my memory as I recall such dishes as meatballs with gravy, apple dumplings, panfried scrapple with syrup, the homemade garlic laden pickles that came to the table as part of a relish tray, fresh bread smeared with apple butter, a thick juicy ham steak and a country red cabbage that just melted in my mouth.  Ahhh!  What I've always loved about this style of cooking is its simplicity.  No, that does not mean it sports one dimensional flavor.  Amish cooking has a basic "feel" to it that reflects the here and now of what many Pennsylvania Dutch farmers have eaten over the years.  Here is a recreation of that wonderful red cabbage...Ahh!

      Macaroni with White Cabbage and Leek
      Cook macaroni (or another short pasta) according pack instructions. Cook in hot wok (without oil) 250g diced bacon until golden. Add 2 finely chopped garlic cloves, 300g chopped white cabbage and 1 leek (chopped in rings). When the vegetables are done add a can tomato puree, 250ml creme fraiche, 1 tablespoon Italian herbs and seasoning. Just heat a bit more. Drain the pasta and stir this into the cabbage mixture. This one came from Russia from what I understand as is part of the controversial cabbage soup diet.       Quiche with White Cabbage and Cashew Nuts
      Fry in a wok, 1 finely chopped onion togheter with 1 finely chopped garlic clove. Add 300g ground beef and fry until brown. Season it with cajun spices. When the ground beef is brown, add 125g sliced mushrooms and 1/2 white cabbage, chopped. Stir fry until the cabbage is done. Season it and add some parsley and oregano. Stir about 75g cashew nuts in. Beat in a bowl 2 eggs with 50g MonChou (a softcheese). Stir this into the white cabbage mixture. Put in a greased and floured tin croissant pastry. Fill it with the white cabbage mixture and place it in a preheated oven at 180C (fan) for about 15 to 20 minutes. Or until the croissant pastry is ready. Carefully get it out of the tin. Enjoy!

      Warm Bacon Cabbage Slaw
      1/4 cup light sour cream 2 tablespoons light mayonnaise 2 tablespoons cider vinegar 1 tablespoon spicy mustard 1 tablespoon brown sugar 3 slices bacon chopped 4 cups shredded green cabbage 2 stalks celery sliced 3 green onions chopped 1 teaspoon salt 2 teaspoons freshly ground black pepper In a small bowl whisk together sour cream, mayonnaise, vinegar, mustard and brown sugar.       RECIPE INGREDIENTS1 cabbage1 1/2 lbs. ground beef1 onion, chopped1 c. rice1 egg1 tbsp. salt1/2 tsp. pepper1 tbsp. paprika2 c. sauerkraut2 c. tomato sauce1/2 c. water1 c. sour creamRECIPE METHODCore cabbage and place in large bowl.       Cabbage Tang Hoon recipe is more or less a fake Shark’s Fin recipe. Why? The glassy look and texture (tang hoon as also known as glass noodles) of the tang hoon is quite comparable to the shark’s fin, albeit not as crunchy. If I am not mistaken, there is a Stir Fried Shark’s Fin recipe out there which is quite similar, though more princely in price. For those who are non-supporters of eating shark’s fin, this dish is a good substitute and can even be served as a main dish itself, much like any noodle dish.       INGREDIENTS:3 Cups grated or finely chopped Cabbage6 Green chilies chopped finely6 slices of bread(white or wheat)1 Big Onion Chopped finely3 Tbsp of Mint Leaves or coriander leaves-chopped1 tsp Coriander Powder1 tsp Jeera Seeds1 tsp Red Chili Powder1 Tbsp Corn FlourOil for fryingMETHOD:Mix Cornflour in water and make a very thin paste out of itMix all the above ingredients except Cornflour using minimum amount of water and make small ping-pong sized balls out of them.Slowly press these balls keeping them in the center of your palm giving it a nice cutlet shape.Dip these in the above cornflour paste and thava fry or deep fry them until golden brown.Serve hot with your choice of ketchup.Enjooy!!!

      Ingredients:1 small cabbage, sliced fine3 cloves garlic, chopped1/2 cup sliced onion1/2 cup sliced tomatoes1/2 cup pork, sliced1/2 cup shelled shrimps1 cup shrimp juice2 tsbps. shorteningsalt to taste Procedure:1.       CABBAGE RICE
      INGREDIENTS:1.5 Cup Cabbage- finely chopped2 Cups Basmati rice1 Medium Onion1 Tbsp Coriander seeds4 Tbsp Chopped Coriander Leaves3 Tbsp of fresh/frozen Grated coconut3 Green chilies1 tsp Garam Masala1 Tbsp Jeera seedsLime JuiceSalt as per tasteMETHOD:Wash and cook basmati rice with double amount of water and set it aside to cool.Blend together coriander seeds + coriander leaves + coconut + green chilies into a nice and smooth paste.Now heat about 1 Tbsp of ghee/ oil and add sliced onion and fry it till brown. To this add jeera seeds and fry for another 2 mins.Now add the blended paste and fry for another few mins along with some garam masala powder.Stir in chopped cabbage, add enough salt and cover and cook for sometime until cabbage is nicely cooked. Add lime juice.Mix it with cooked rice and serve hot with raitha.
