      A Buttermilk Trail Map.
      You start at Reedy Creek Park that is off of 42nd about two blocks East down Riverside Drive. The trail goes West along the James River called "Upper Buttermilk" to the "Nickel Bridge (161). You then have to ride over the bridge to the North side of the river. This is called The "North Bank" and you bike East through the cemetery to Tredegar Street. You then go South on the footbridge under the Robert E. Lee Bridge (301/1). That brings you to Belle Isle.You can ride all over this area with a number of trails that are from beginner to expert. You will encounter many people on B.I depending on what time of year it is. After this, you then go on the "Lower Buttermilk" trail biking west, skirting Riverside Drive and the train tracks along the banks of the James River. After completing this section, you will end back up at Reedy Creek Park where you began.       Spicy Buttermilk Fried Chicken
      There are few things better than crispy, spiced fried chicken served up with Parkerhouse rolls slathered with fresh creamery butter, corn, mashed potatoes, gravy, and a nice green veggie or cauliflower. This recipe takes a little planning, but OH - is it EVER so good!! 3 cups buttermilk 1/4 cup TABASCO 3 teaspoons salt, divided 1 (2 1/2- to 3-pound) chicken, cut up into 8 pieces 2 cups all-purpose flour 1 teaspoon garlic powder 1/2 teaspoon onion powder 1/4 teaspoon pepper A small dash of Cardamon Canola oil for deep-frying Combine buttermilk, TABASCO, and 1 teaspoon of the salt in a large bowl or large resealable plastic bag and mix well. Add the chicken and cover bowl or seal bag; refrigerate for 6 to 24 hours.Combine flour, remaining 2 teaspoons salt, garlic powder, onion powder,cardoman, and pepper in a shallow dish.       Buttermilk Trail System...
      Mark and I got in a 7.8 mile ride on the trail system yesterday evening. It was a good ride and i liked the trails better then i had before. I will hope to be able to ride them again soon as they are very challenging and the hardest trails that i have ever ridden on. They are 4 sections and some are harder than others.       Make Your Own Buttermilk
      This is very very simple to do.  I have seen places that sell cultures for you to use but like cheese making, you really only need something that will cause the milk to coagulate and plain old ordinary vinegar will do that. All you need when ever you need buttermilk for any recipe at all is plain older ordinary skim, 2% or regular milk and white or cider vinegar.  A couple of tablespoons in1 cup is all you need.  Just add the vinegar to the milk (don’t mix it) and let it sit until the milk is at room temperature and you have butter milk.

      Whew! What a week! I never thought Friday would get here. Tons of homework, papers due, and the thought of two of my classes being cancelled nearly gave me a heart attack! Alas, there was a light at the end of the tunnel; my "Food & Wine", "Martha Stewart", and "Perfect Cakes" by Nick Malgieri (cake guru) arrived. YEAH! It's also a three day weekend another, YEAH! I took my new book to my favorite chair and combed through the recipes. Buttermilk Cake? It was touted as being the perfect accompaniment to fruit. Hmm....lemon curd? Hmm....meringue? The result ...the cupcakes did have a slight tang, but they were really tender and moist. For the lemon curd, I have to admit I bought at Whole Foods. I know, I should have made it. The meringue as a frosting really made the cupcakes light and not overly sweet. The recipe is for two 9 inch round pans; I really only like to make 12 cupcakes at a time (so I halved it).
