This recipe was created by chance. I was thinking of blanching some broccoli to make garlic butter broccoli to go together with the pasta that I cooked (yes, apart from the usual Asian fare, I do cook pasta quite often) when I realised that I had some left over ingredients in the fridge which could go together to create something oriental.
By that, I was referring to calamansi and fresh red chillies. Add a little garlic and some sauce and you’ve got yourself a tangy and zesty Oriental Broccoli Salad. The garlic can be a tad pungent for the uninitiated and can leave an unpleasant garlic odour in the mouth hours after eating. Might not be suitable if you plan to go dating after having this salad.

The compound sulforaphane whose natural precursors are found at high levels in broccoli and other cruciferous vegetables has been hailed for its chemopreventive powers against cancer. Now sulforaphane has demonstrated new skills in treating a genetic skin blistering disorder called epidermolysis bullosa simplex (EBS), Pierre Coulombe and colleagues at the Johns Hopkins University School of Medicine in Baltimore report at the American Society for Cell Biology 47th Annual Meeting.
EBS is a rare but devastating inherited condition in which fluid-filled lesions called bullae appear at sites of frictional trauma to the skin. Unfortunately, treatment options for EBS are limited and palliative in nature. Much work remains to be done before sulforaphane can be tested clinically with EBS patients, but Coulombe notes that extracts from broccoli sprouts rich in sulforaphane have already been shown to be safe for use in human skin.

Cook 3 minutes over low heat, stir constantly. Cool. Set aside. If using broccoli: Wash and trim off tough part. Separate and cut into 1/2 inch pieces. In a large saucepan saute onion in 2 tablespoons butter until tender. Stir in broccoli, cover and cook 3 minutes. Stir in stock or broth, heat to simmering. Stir small amount of liquid into cooked flour and butter mixture until smooth; return mixture to saucepan; stirring until smooth. Simmer, covered until broccoli is tender, about 30 minutes. Remove from heat, cool slightly. Puree in electric blender, return to saucepan. Blend cream into soup. Taste and salt and pepper if needed. Serve. ------------------------
Here's a relatively quick and simple dinner idea consisting of a couple of potatoes, bag of broccoli and a box of chicken stuffing.Potatoes were simple. Heat oven to 350 degrees. Cook the tagliatelle according pack instructions. Cook in another pan 300g broccoli and cauliflower florets with salt until done. For the tomato sauce cook 1 finely chopped onion until soft. Add 1 finely chopped garlic clove and thyme to taste. Cook shortly. Add 1 can diced tomatoes (400ml), 1 tablespoon tomato puree and 100 ml cream. Bring shortly to boil. Season it. Lower the heat and let it simmer for a while. At the end add some chives to taste to the tomato sauce. Drain the tagliatelle and also drain the broccoli and cauliflower florets. Dress the tagliatelle on your plate, then the broccoli and cauliflowers florets and then the tomato sauce. If you like it scatter some grated cheese over it. Enjoy!

Add 1 finely chopped onion and 1 finely chopped garlic clove. When the onion is soft add the broccoli florets and 3 diced tomatoes. Also pour in the Jamie Oliver Sundried Tomato Pasta Sauce. This is a take on Aglio e olio that I created after becoming addicted with the dish in Melbourne! The steamed broccoli adds an extra oomph to the recipe allowing the chilli, garlic and oil to marinate into it. It’s very simple and quick to make when you’re in a rush for dinner or have unexpected guests and need to impress.
Ingredients:
wholemeal spaghetti, 2 serves
4 cloves garlic, chopped finely
2 tbs breadcrumbs
salt
pepper
2 tbs olive oil
1 - 2 florets broccoli, chopped into small florets
2 tbs grana padano grated parmesan
1 tsp chilli flakes
Instructions:
Steam the broccoli in a seperate pan and boil the pasta until al dente.
Once the pasta is cooked, set aside after rinsing through with cold water to ensure that the pasta doesn’t stick together.
Place a little oil in the pan and saute the garlic and chilli flakes.
Place in the broccoli swirling around with the garlic and the chilli.

Once again I have discovered a new fabulous tasting recipe in The America’s Test Kitchen Family Cookbook. This relatively low-fat dish cooks up pretty quickly which is always nice when time is hard to find.
Chicken, Broccoli and Ziti Skillet
1 pound boneless, skinless chicken cut in strips (I used chicken tenders.)
3 tablespoons butter (I just used PAM to make the meal lower in calories.)
1 onion, minced
1/4 teaspoon red pepper flakes
1/4 teaspoon dried oregano
salt
3 garlic cloves, minced
8 ounces (2 1/2 cups) ziti (I used farfalle - it is what I had on hand.)
2 cups chicken broth
1 cup milk (I used skim.)
1 bunch broccoli florets (I used a 16 ounce bag of frozen broccoli florets.)
1 cup sun-dried tomatoes, chopped or 1 cup roasted red peepers, chopped
1/2 cup Parmesan cheese, grated
2 tablespoons lemon juice (optional)

I thought I'll use up the broccoli and cauliflower in the fridge but then the kids will kick a fuss for having to eat them. Since, I have a fresh carton of whipping cream, I thought I'll try making creamy soup with the ingredients. Hopefully, the cream will mask the taste of the veggies. Well, it worked. Over the last few days, I’ve been doing quite a bit of cooking and also viewing some delicious recipes being made at the Buddhist Vegetarian Cooking Class. We were shown how to make vegetarian wontons - my absolute favourite snack food when going to a couple of the vegetarian restaurants and also hot and sour soup.
Once, I’ve remade these myself, I’ll post some photos and the recipes for all of you to try for yourself! I recommend highly the wontons! They really are delicious, so much so that you just can’t stop eating these moreish little numbers!
Today’s recipe though, is based on having a whole heap of broccoli at home. I bought a little too much this week and thought I’d use it for my soup for the week.
The soup is made creamy by a little milk and flour. It hasn’t got a lot of high calorie ingredients, so you can pretend that you are endulging! This makes about 7 cups of soup.
Ingredients:

Well, back when I was growing up and my mom got broccoli and spinach out of a can, it not only tasted bad, I doubt seriously if it was really good for me. Eating more cruciferous vegetables like broccoli and cauliflower is associated with a reduced risk of aggressive prostate cancer.
Several studies have demonstrated an association between eating vegetables and a reduced risk of prostate cancer, but study results have not been consistent and many have not investigated the association among patients with aggressive prostate cancer.
Victoria Kirsh, Ph.D., of Cancer Care Ontario in Toronto and colleagues evaluated the possible association in 1,338 prostate cancer patients diagnosed in the Prostate, Lung, Colorectal and Ovarian Cancer Screening Trial. Each of the men completed a 137-item food-frequency questionnaire.
They found that eating fruits and vegetables was not associated with decreased prostate cancer risk in general. But greater consumption of dark green and cruciferous vegetables, especially broccoli and cauliflower, was associated with a decreased risk of aggressive prostate cancer.

This is the easiest recipe evah! 1 lb beef stew meat (or fajita cut strips)1 pkg frozen broccoli crowns1/2 cup soy sauce1/2 tea Ginger1 Tbs Olive OilHeat olive oil in a wok (or a deep frying pan) and add beef. 1 Packet Cream of Broccoli Soup
3 egg whites
1/4 tsp baking powder
1/2 C steamed broccoli
Place egg whites, soup and baking powder in mixing bowl and beat well. Divide steamed broccoli equally into 3 muffin cups and pour batter over the broccoli. Bake at 400 for 15 minutes. Counts as one MF meal, 1/4 lean and 1 green serving.
