It is almost impossible to pour clear wine from one bottle to another  without stirring up the lees (deposit) - the best method is to siphon the  clear wine at bottling time. First, put the bottle or jar of wine on a table and the empty bottles on a  box or stool on the floor. Then, using a yard and a half of surgical rubber  or plastic tubing, siphoning is quite a simple operation. Put one end of  the tubing in the full jar (or the first of the full bottles) and suck the other  end until the wine comes. As soon as this happens, pinch the tube at your  lips and, while holding on tightly, put this end in the first empty bottle  and let the wine flow. As the empty bottle nearly fills, slowly press the  tube between finger and thumb in order to cur off the flow slowly rather  than with a jerk. Sudden stoppage often stirs up the deposit. When the  bottle has filled to the shoulders pinch the tube at the neck of the bottle  being filled and put this end into the next bottle and

I waited, kicking myself for showing up on time, when I knew there would be some kind of delay, in this first day of a four-day run. Once everything was ready, the guys out back started loading empty bottles onto the conveyer belt– to flip through a circusy-looking rotating circle. Then the bottles made the trek to be filled with wine (2005 Thomas Fogarty Skyline) and further still to have a cork popped into the neck. Here’s where I came in. I put the metal foils over the bottles, which would then be sealed to fit the neck more tightly. A very important job, readers and drinkers. Almost eight hours of this task, over and over. I sang along to Lucinda Williams and Rilo Kiley, Johnny Cash and Bright Eyes. Hopped from one foot to the other, twisted at the waist, closed my eyes when I could to keep them from

Here is a quick update on our progress toward bottling our Escafeld 2004 Petit Verdot. As a reminder, this is a pure varietal wine made with a grape that is grown in Bordeaux principally as a blending component (it'll typically make up a couple of percentage points in a red Bordeaux wine). Here in California, Petit Verdot is not too widely planted, but the conditions here in the San Antonio Valley are perfect for this grape, which develops to its full ripeness potential without difficulty. I've written before about the Petit Verdot grape - here is a link.So, our labels are approved by the TTB, we've approved proofs from the printer, and bottles, corks and foils have been ordered. We're expecting to have everything in place for a mid-October bottling.This will be one of the first (if not the first) wines to carry the San Antonio Valley appellation, and it's also a new varietal for us (along with our Merlot and Zinfandel), so needless to say we are pretty excited about it.
