      Steers and basil. Start computin'.
I don't even know where to start. Let me wipe the laughter-filled tears from my eyes...So, yes. We are in Lamar, Colorado. Home of the Savages and a gas-station-turned-used-car-dealership full of petrified wood. This has shaped up to be one of the most bizarre weekend adventures we've ever taken. Let's recap the last 24 hours.Friday: Steers and basil. Start computin'.We arrived last night at our home away from home, the Holiday Hotel, just before Phil's show. As Phil checked us in, I watched two cowboys practicing their roping skills on a metal "steer" in the parking lot. They saw me watching, then the emboldened buckaroos began to put on quite a show. It's not often you get the chance to see bumbling rodeo antics at a motel. A most excellent start to the trip so far.Amos and I

Pizza with Parma Ham, Basil, and Red Onion & Feta & Butternut Squash Pizza with Ricotta and Pine Nuts
Each Friday, InterWined.com pairs one great wine with one great meal and publishes the results along with the recipe in a little feature it likes to call ‘Blow the Bank’. This week, ‘Blow the Bank’ brings you two of InterWined’s favourite pizzas. Pizza with Parma Ham, Basil, and Red Onion Feta & Butternut Squash Pizza with Ricotta and Pine Nuts The 2006 ‘Taste the Difference’ Primitivo del Salento, from Italy and available exclusively to Sainsbury’s for approximately £5, is made by Cantina Due Palme, an Italian co-operative from Apulia known for their award- winning Primitivo. So, it doesn’t disappoint. In fact, it slightly astounds. For £5, this is one of the best wines that I’ve had in months; it’s also great for pairing with all manner of foods. T

Pizza with Tomatoes, Mozzarella and Basil (Pizza Margherita)
Today, we're featuring a recipe from one of our newer releases: Anna Teresa Callen's My Love for Naples, an exploration of the food, history and life of the Neapolitan region of Italy. Anna Teresa is truly "one of the national treasures of Italian cookery," and this is a particularly simple, but delicious, recipe for Pizza Margherita. As Anna Teresa writes:In my opinion, this is the pizza that conquered the world. A famous Neapolitan pizzaiolo (pizzamaker), a certain Mr. Esposito, was once invited to the royal palace to make pizza. In honor of the Italian Queen Margherita he decided to top the pizza with ingredients in the three colors of the Italian flag: tomatoes, mozzarella, and basil. He called it Margherita, and a legend was born. Remember though, that the basil must be fresh to truly

      Grow Basil
Basil is an annual with many varieties. It is a bit of a chameleon, coming in a range of sizes, leaf colors, leaf shapes, and aromas. A fast grower, basil is native to Asia and Africa, and has a solid, if not revered place in the kitchen. Growing Basil Cultivate basil in full sun and provide it with well-drained soil that has a layer of mulch to reduce moisture loss. An annual, basil can't

Tesco Healthy Living Tomato and Basil Soup
I had high hopes for this one...ready-made tomato soup with no added sugar and available in small, one person/portion-sized cartons (300 g). Here's a pic, so you know what to look out for.It contains:tomatoes (59%)tomato puree (30%)onionvegetable oilcornflourbasil (0.6%)garlic pureesaltoregano - N.B. a powerful anti-fungal!black pepperNothing that should antagonise (encourage?) any lingering yeasty-beasties. But, for me, the flavour was too sharp and slightly bitter (really needs sugar sadly), and I didn't get on well with the large chunks of tomato (I prefer a smooth texture). Still, others might disagree - it's worth giving it a go.

More Gardening - Tomato, Basil and Chilli
This weekend I have been busy doing some more gardening. I posted earlier about the hottest chillies known to man, the Dorset Naga. Well, I was very lucky to be given some of these by a colleague at work who bought some from www.reallycoolseeds.com.This is the selection that I have ended up with as a present from him:Dorset Naga: described as having a really hot fruity flavour, and rated as around 900,000 SHU they are the hottest chillies ever discovered. I am not sure what to cook with these just yet, apparently you just wave them near your food to get the flavour into it.Orange Habanero: Another blisteringly hot chilli, which are salmon orange when ripe. They have a fruity flavour.Hungarian Hot Wax: Easy to grow according to the pack which is good. They are supposed to be good fr

Basil Brush has become embroiled in a racism row over a scene featuring a gypsy woman selling heather and wooden pegs. Pasta is such a staple dinner item in so many homes, it can get kind of challenging to make it interesting! But of course, thanks to hundreds of different types of pasta varieties, and also the packaged sauces that supermarkets horde for you, there are plenty of options to choose from, especially when different people in the same house have different tastes. Like I love penne and rigatoni, but my dear husband settles for nothing but linguine or fettucine. So if I have to feed him something else, I have to package it in a clever and tasty way so he can crib a little but still enjoy his food:) I generally like the sun-dried tomato alfredo sauce for my pasta, but this time I tried making the traditional Italian Marinara sauce at home, just to see if I could compete with Raagu and Bertoli!! Fettuccini Alfredo with Basil and Rosemary
Pasta is similar to noodles, except that it is now available in a variety of shapes, sizes and flavors. Italian by origin, pasta is something that is loved and cherished in every household in US. It also generally involves a quick and easy preparation, coming to your rescue when you need a healthy and filling meal in as little time as possible. Supermarket aisles are full of different kinds of pasta like Penne, bow-tie, spagetti, fettuccini, fusili, tortiglioni, tripoline, pruntalette and more! Its interesting to know the names and the shapes:) and now, considering the health awareness among people, they also sell whole wheat pasta! Fettuccini is my favourite, and I've always loved the smell of basil and rosemary. One another ingredient that I cannot have my pasta witout, is pine nuts! They look like tiny watermelon seeds, and taste great when roasted. Toni Basil - Mickey (1982)
Toni Basil was one of new wave's ultimate one-hit wonders, falling completely off the musical radar screen after topping the charts with the ubiquitous cheerleader-chant single "Mickey." Chiefly a choreographer, Basil was born Antonia Christina Basilotta in Philadelphia (sources listing her birth date range from 1943 to 1950) and attended high school in Las Vegas, where -- unsurprisingly -- she was a member of the cheerleading squad. After high school, she became a go-go dancer and quickly moved into choreography, working on '60s television shows like Shindig and The T.A.M.I. Show; in 1964, she appeared with Annette Funicello in the film Pajama Party, which she also choreographed. In 1966, Basil released her first single, the Graham Gouldman-penned "28"; the B-side was her recording of the title song from avant-garde filmmaker Bruce Conner's Breakaway, in which she also appeared as a dancer. Basil's acting career soon hit a peak with her role in 1969's landmark Easy Rider as a New

      More Basil
I harvested another arm load of basil this morning.  Basil, chives, and mint are pretty much the only things still producing for me.  I’ve let my garden shrivel up.  Those 9 basil plants will continue to produce until the weather gets to cold for them as long as I keep them watered.  I would have a lot more but unfortunately I didn’t plant all 9 of them in full sun.  The ones in partial sun are still producing though. I find myself wish I had a greenhouse to grow tomatoes and things in.  Its to late to start a bumper crop.  I’m going to miss having fresh tomatoes and cucumbers this winter.  I’ve been tempted to dry and grow lettuce indoors, but it seems hardly worth the effort since the electricity to do it will be more expensive that buying it. There will be a lake behind out new house once we damn up the wet weather stream back there and I plan to have a floating green house on it.   I found a book at the library last year called primitive shelters o

      Basil’s Medicinal uses
Basil is widely known and used for its culinary attributes but not for its medicinal uses. While there are numerous types of the basil plant, we tend to use sweet basil and bush basil for cooking because of its palatable taste. Basil originated in India, Egypt, Greece, and Rome it was considered a sacred herb. One whiff of fresh basil and you will understand why. It was said that its name was derived from a mythical serpent creature – the basilisk. (This create is talked about a great deal in Harry Potter books and movies. This creature was known to have killed with a look. Sweet Basil grows to 2 1/2 feet in height while Bush Basil grows to one foot in height. Both need full sunlight and a light to sandy, well-drained soil. It should be planted in late spring and harvested in early fall. But don’t plant it to early because Basil is sensitive to cold weather. When planted next to tomato plants, it wards of the white fly, which plagues the tomatoes. Basil is a versatile herb

      Cooking With Basil
In today’s world of ecoli scares and pet food recalls the concept of “eat locally, eat seasonally” is more popular than ever. You may be eating locally grown, seasonal food but are you seasoning your food with the same concept in mind? During the summer when so many wonderful fresh ingredients are available, why not enhance the flavor experience using fresh herbs. Obviously, nothing is better than fresh picked from your own garden, but for those lacking a green thumb or the space to grow, many Farmer’s Markets are now featuring fresh herbsBasil is the official herb of summer. Barely tolerating temperatures below 60o , Basil begins its life while spring is waning and begins to fade as the coolness of fall sets in. In June 2007 the NPR program All Things Considered asked its listeners to share their thoughts on summer foods and flavors. Many responded that the flavor of fresh pesto was the embodiment of summer. Pesto might be the most well known and commonly eaten basil dish but

Basil Bread and an Abundant Harvest.
Here is some of my harvest. My herbs just about always do better than my vegetables. I have loads of cucumbers and some tomatoes and as you can see a nice bundle of chives. But my pride and joy at the moment is this beautiful Basil. The first year I planted it I planted 12 plants and watered them with human urine (its a long story but it worked out really well). My the first of August I had a gallon bag full of chopped basil in the freezer and I could no longer even give it away! I was hoping to get enough to make my basil bread recipe.  I like to make it when its cold outside and we have a fire in the fireplace.  I will sit trays of it in front of the fireplace to rise before putting it in the oven.   Here is the recipe. Basil Bread 2 pkgs yeat 1 1/2 cups warm water 1/3 cup shortening 4 cups unbleached flours 1/4 cup of brown sugar 1 1/2 tsp salt I egg 2 tablespoons fresh chopped basil 2 cloves of garlic melted butter Combine brown sugar, warm water (warm to the touch), and y

      Basil as an aphrodisiac
Basil Valdez a Filipino BalladeerPersonally, I think he has nothing to do with "basil plant". However, who could tell?Basil (Ocimum basilicum) of the Family Lamiaceae is also known as Sweet Basil. It is a tender low-growing herb that is grown as a perennial in warm, tropical climates. Basil is originally native to India and other tropical regions of Asia, having been cultivated there for more than 5,000 years. It is prominently featured in varied cuisines throughout the world including Italian, Thai, Vietnamese and Laotian. It grows to between 20–60 cm tall, with opposite, light green, silky leaves 1.5–5 cm long and 1–3 cm broad. The flowers are quite big, white in colour and arranged in a terminal spike. Unusual among Lamiaceae, the four stamens and the pistil are not pushed under the upper lip of the corolla, but lay over the inferior. After entomophilous pollination, the corolla falls off and four round achenes develop inside the bilabiate calyx. The plant tastes somewhat like

      THAI EGGPLANT BASIL
We had this dish at a Thai restaurant at Big Island, Hawaii and loved it rightaway. The dishes were so good that we kept visiting this place everyday during our stay. This particular one had a great flavor and taste (well, which one did not?!!) They served it with a lot of fresh Kaffir lime leaves, which adds a heavenly taste. However since I couldn't get these leaves at our Asian grocery store, I used lemon rinds to get the fresh citrus flavor.INGREDIENTS:2 Chinese Eggplants ( thin, long purple eggplants)- chopped into thin fingers.25-30 Basil leaves chopped8 Lime Leaves( optional- I didn't use it as I couldn't find them)1 Tbsp Sambal Oelek4 cloves of Garlic- chopped1 Tbsp Soy Sauce1 tsp Brown SugarSalt as per taste2 Tbsp Olive OilLemon rinds of 1 LemonMETHOD:Heat olive oil in a heavy bottomed pan and toss in the chopped garlic until softened. To this add the eggplant, toss and let it cook nicely. Fr. Anthony Kazarnowicz, a good friend of mine who was an Associate Pastor of Our Lady of Czestochowa Parish in Worcester, Massachusetts and now serves as a U.S. Army Chaplain, once wrote to thank me for a letter to the Editor which I had written to The Catholic Free Press expressing my concerns over the column of Fr. Pennington's column represented somewhat of an improvement over that of dissident moral theologian Rev. Richard P. McBrien, still, there was much room for concern. The link above will take you to an excellent article detailing the problem with Fr. Pennington's "Centering Prayer."Paul.
