This is the last day of Great Grains Week, so I thought I’d highlight a grain I love, although it’s pearl barley I’ve used more that the whole grain.

Barley is one of the oldest cultivated grains. Egyptians buried mummies with necklaces of barley, and centuries later Edward I of England standardized the inch as equal to “three barley seeds.” It is a highly-adaptable crop, growing north of the Arctic circle and as far south as Ethiopia.
Barley has a particularly tough hull, which is difficult to remove without losing some of the bran. Hulled barley, available at health food stores, retains more of the whole-grain nutrients but is very slow-cooking. New varieties of hull-less barley are starting to become available. 2 lb. beef shanks2 c. thinly sliced carrots1 c. sliced celery3/4 c. chopped green pepper1 lg. onion, sliced1 (16 oz.) can cut up tomatoes1/4 c. snipped parsley1 tbsp. instant beef bouillon granules2 tsp. salt3/4 tsp. dried basil, crushed5 c. water Cut beef into cubes, brown on all sides, and drain well. In crockery cooker place carrot, celery, green pepper and onion. Place beef on top. Combine undrained tomatoes, barley, parsley, bouillon, salt and basil. DO NOT STIR. Cover. Cook on low heat 10 to 12 hours. Remove bones if used. Skim any fat. Season with salt and pepper to taste.

The first half of Ken Loach’s The Wind that Shakes the Barley can easily be seen as a justification for terrorism and a condemnation of torture—the obvious reading for an American in a country now more or less obsessed by the topics.
If justifying terrorism seems a hard thing to do, The Wind that Shakes the Barley makes it look easy. From the first scene, the occupying British look roughly like bullying incompetents, and fighting back through “terrorism”—it’s really a matter of perspective—is the only recourse that the boys from County Cork seem to have.
And surely the torture Mr. Loach displays is far worse than anything this country has been known to do. Pulling out fingernails wish rusty pliers is likely far uglier than the results of extraordinary rendition, waterboarding, or psychological deprivation. But the brutality only serves to make the practice’s jarring pointlessness more clear.
