We thought we'd check out Totally Baked Totally Baked on opening day. The well designed space was filled with people on a rainy day, so good job to the publicist. They seem to be working out some logistical kinks as the wait was quite long, and Melinda's (Lon's co-worker) order got lost (They gave her an extra baked potato and a drink for that). First, let me thank Robin at Caviar and Codfish, formerly known as Clumsy Cook who grew as a cook into a great cook, IMHO. She made this dish in her $10 or $12 dollar cast iron ramekins from Wal-Mart. I saw them on her blog and as I can get sometimes, I got enthralled. So much to the point that I just had to taste it. I HAD to! And alas, I did. And It was good.
I didn’t stray from her recipe at all except for the fact that I bake my bacon and I couldn’t find those cast iron ramekins. I did find some similar ramekins though; they were considerably more expensive, but like my blogging friend Erin from Erin Cooks will tell you, it’s okay to have a little All Clad in your collection. This is my husband's favourite fish dish. Phew! At least it's not expensive cod. This is just the opposite. It's cheap! It only cost me a dollar to get one Selar. But it doesn't taste cheap though. *laughs*As it's a hassle to prepare the spices, I usually do more and keep it in the fridge for a few more days. It goes quite well with squid too.If you can't get banana leaf, you can use aluminum foil, not that it taste nice lah. At least you could cover it (like a tent) to bake. So the fish won't get too dried up, exposed to direct baking and to let the fish gets the flavours. Pasta is such a staple dinner item in so many homes, it can get kind of challenging to make it interesting! But of course, thanks to hundreds of different types of pasta varieties, and also the packaged sauces that supermarkets horde for you, there are plenty of options to choose from, especially when different people in the same house have different tastes. Like I love penne and rigatoni, but my dear husband settles for nothing but linguine or fettucine. I'll admit it. I have a problem. I tend to focus on an ingredient and then make it eleventy billion ways. At that point, Dave is tired of eating it, so I move on to something else. It may take a while for me to fixate on something new, but the fixation is inevitable. I don't see what's so wrong with it, myself. I look at it as fully exploring and experimenting with an ingredient. Or something. :)This dish features two of my more recent loves (butternut squash and fresh pasta), plus one I can't let go (goat cheese). I think all three are easily explainable, don't you? It's Winter, and butternut squash is in season, so I am taking advantage of the opportunity to eat seasonably. Fresh pasta is so easy to make (provided you have the right equipment, otherwise not so much) and tastes so so nice
