I was strutting past FoodChair today and happened to notice a very enticing banana bread recipe. So, I thought I’d share it with you this morning. Enjoy. Ingredients: 5 tablespoons butter½ cup granulated sugar½ cup brown sugar1 egg at room temperature2 egg whites whipped soft peaks1 teaspoon vanilla1 ½ cup banana puree1 ¾ cup flour1 teaspoon baking soda¼ baking powder½ teaspoon salt½ cup heavy cream½ cup toasted walnuts Preheat oven to 350 degrees. Beat brown and white sugar into softened butter until fluffy. Incorporate egg, vanilla and banana until just mixed. Fold in egg whites. In a separate bowl sift all dry ingredients. Gently fold in ½ dry into wet. Then repeat with remaining dry. Lastly stir in cream and walnuts. Pour into a greased loaf pan and bake about an hour or until toothpick comes out clean. Eat well & Laugh often.

This is the first banan bread I’ve eaten since a very bad experience at the Last Drop Cafe in Dulwich Hill during the great banana shortage of 2006… My faith has been restored in the good ‘ol banana bread. It’s particularly good toasted under the grill, with a generous spread of butter, and cup of coffee… mmmmmm.
Takes about 15 minutes of prep and 55 minutes to cook.
You need:
Cake Tin (about 20cm x 8cm x 5cm or something…)
Self Raising flour x 1 3/4 cups
Brown sugar x 3/4 cup
Walnuts x 1 cup (crush them up in the packet)
Butter x 113 grams (melted in the microwave for about 40 sec. on high)
Eggs x 2 or 3 (lightly beaten)
Salt x 1/4 teaspoon
Vanilla extract x 1 teaspoon
And 3 or 4 mashed bananas (preferably old brown bananas).
Preheat oven to 180 celsius. Grease your cake tin with some butter.

Yield: 20 servings 1/4 c Sugar; 1 ts Baking soda; 3/4 c Sugar Twin; 2 c Flour; 1/3 c Margarine; 4 tb Milk; 1 Egg; 3/4 ts Vinegar; 2 Egg whites; 3 Bananas; ripe, mashed Blend sugar, Sugar Twin, and margarine. Add eggs and mix well. Sift flour and soda into bowl and stir. Mix milk and vinegar together, then add to mixture. Fold in bananas. Bake 1 hour at 350 degrees in greased 9 x 5 loaf pan. I discovered banana bread one week after I came to US, and from that day onwards, it has been my favourite! I love the taste, the delicate banana flavor and the crunchy pieces inside. Yesterday, I vowed to use five ingredients languishing in my pantry, or to die trying. Today, since I had some very ripe bananas, I decided to make banana bread. I made two subsequent decisions that led to the most flavorful, tender example of banana bread I have ever personally tasted. First, I decided to try Mark Bittman’s banana bread recipe from How to Cook Everything. Second, I decided to start my Pantry Reject Challenge by using my Manischewitz Cake Meal instead of regular flour called for in the recipe.
This banana bread is, seriously, to die for. It is infinitely better than what I have made using my previously posted recipe. It is tender, flavorful, moist, with a slightly crisp crust, and has a nice complexity from the unsweetened coconut and the nuts. I also like it better with butter instead of oil. The only hitch is that I will have to make it again with regular flour instead of the Cake Meal to see if that made a big difference in the fabulousness of the results.

There are dozens of recipes for banana dosa, but this is the one that's "the classic" and because it turns out so soft and fluffy just like bread or pancake I named it Banana Bread Dosa.
