      Although I'm not a lover of chocolate or sweets in general, there is one candy bar I like once in a while and that is an Almond Joy. That's interesting to me because I wasn't raised in a family that bought or ate coconut but I grew up with a love of it anyway! (Unless it's mixed with pineapple...       Almond Ice Cream in Almond Phyllo Shells recipe
      1/4 cup blanched almonds 2 cups milk 2/3 cup heavy cream 3 egg yolks 1/2 cup sugar Reduce the almonds to a powder. Add the milk and heavy cream to a saucepan with the almonds. Bring to a boil and remove from heat. Mix the egg yolks with the sugar until light and fluffy. Add the almond mixture and mix well. Return the mixture to the saucepan. Heat mixture over medium low heat until the custard thickens and coats the back of a spoon. Do not boil. Strain custard into a clean bowl and refrigerate until cold. Freeze ice cream according to manufacturer's directions. Transfer to a container and freeze until firm. Serve in Almond Phyllo Shells. Almond Phyllo Shells:3 sheets filo dough 1/4 cup (1/2 stick) butter, melted 1 tablespoon almond extract 1/4 cup sliced almonds, chopped super fine 1/2 teaspoons coarse salt In a small bowl, combine the butter and almond extract and stir until smooth.       Almond Ice Cream recipe
      1/4 cup blanched almonds 2 cups whole milk3/4 cup heavy cream 3 egg yolks1/2 cup superfine sugar 1 teaspoon kirsch Pound the almond into paste. Add milk and heavy cream, mix thoroughly together. In a saucepan, heat the almond mixture to a boil. Remove from heat. In a bowl, mix egg yolks, sugar and kirsch for 5 minutes. Add almond milk and mix well with wooden spoon. Heat the mixture over low heat for 5 minutes without letting it boil. Stir continuously. Then allow it to cool. Strain through a sieve into ice cream maker and freeze until the ice cream is thoroughly firm.

      Candy Review: New chocolate bars from Scharffen Berger - Antilles Bar and Milk Almond Bar
      Sometimes I just have to say “blah.” Unfortunately, in the case of the Limited Series Antilles bar, “blah” is the predominate word that came to mind when I tasted the chocolate. Scharffen Berger, the maker of the Antilles bar, says it features 75% cacao with notes of plum and citrus zest. I actually got bored while eating it, and am astonished at its suggested $6.50 retail price for 3 oz. Since the upsurge in touting the health benefits of dark chocolate over the last couple of years has caused mass production of dark chocolate products from countless manufacturers, a dark chocolate bar has to really stand out for me to call it special. The only thing that truly stood out as different about the Antilles bar was the cool Scharffen Berger logo imprinted in the center of the bar.       Almond Snow Cookies (Christmas Cookies) Makes about 132 1-1/4 cup soft butter 1/2 cup shortening 1 cup granulated sugar 2 eggs 3/8 teaspoon LorAnn almond oil (www.Lorannoils.com) or 2 to 3 tsp. almond extract 1 cup finely ground blanched almonds 3-1/2 cups sifted flour Confectioners’ sugar Cream shortening, butter and granulated sugar; add eggs and beat until light. Mix in almond oil and ground almonds. Add flour to creamed mixture and mix thoroughly. Chill dough or not. When ready to bake, preheat oven to 325 F. Scoop dough into small balls (I use a 1-1/4″ ice cream type scoop) and place on ungreased baking sheets about 2″ apart. Slightly flatten top with a dampened cloth-covered glass. Bake until set but not brown, about 14-16 minutes. Sift confectioners’ sugar over cookies as soon as you take them out of the oven. Cool on cookie sheet. I especially like it because I'm partial to almond paste.       I love almonds and pecans, and one day at a mall in Dallas, when I first tasted caramelised pecan crunch snacks, I was ecstatic. It was so simple, and yet so perfectly tasty.       Mango Almond Pancakes
      Weekend mornings are one of my favorite times of the week. Lazy wake up times (well, not according to our cat, who insists on playing leap frog over us at 5:00am in an effort to get us out of bed), a hot cup of coffee and a leisurely amount of time to do what I want.       IngredientsMakes about 3 dozen individual cookies or 1 1/2 dozen sandwich cookies 1/2 pound confectioner's sugar, about 1 7/8 cups 1/4 pound almond meal, about 1 cup 1/2 cup egg whites, about 4 large egg whites, at room temperature Pinch cream of tartar 1 1/2 ounces granulated sugar, about 1/4 cup 5 drops red food coloring or other color About 1/2 cup raspberry jam or other non-chunky jam or jelly Preheat the oven to 325 degrees.
