New research suggests that alligator blood could serve as the basis for new antibiotics. These antibiotics could target infections caused by ulcers, burns and even drug-resistant superbugs. The research is still in early stages, and there is no guarantee that it will work in humans. Alligators are able to fight germs such as bacteria and viruses without having been exposed to them first. Researchers extracted proteins known as peptides from white cells in alligator blood. Tiny amounts of these protein extracts killed a drug-resistant bacterial strain called methicillin-resistant Staphylococcus aureus or MRSA. The extracts also killed six of eight strains of a fungus known as Candida albicans, which causes a condition known as thrush.

Today, I was at my property and the resident alligator made an appearance. I have a few pictures some good some not so good. When I first saw him his body was out of the water. But when I got close enough for some good close ups he submerged down so only the snout was out of the water. The entire time I was snapping shots he never took his eyes off of me. I would change spots and he would turn just enough so he could see what I was doing.On Thursday I leave for a 4 day fishing trip down in the Everglades. I am bringing my camera and camcorder. Hopefully when I get back on Sunday I will have lots of new footage and pictures of the Everglades National Park and the wildlife inside. A 13-foot Burmese python burst after eating an alligator almost equal to it's size. The dead animals was discovered by rangers at the Everglades National Park.The remains of the two prodigious reptiles were discovered by surprised rangers in the Everglades National Park. The rangers say the find implies that non-native Burmese pythons might even challenge alligators' leading position in the food chain in the swamps. Brrrr!  Here in New York, the weather has turned cold.  My craving for warmth usually leads me back to some of my hot cajun dishes such as today's recipe-- Alligator Sauce Piquante.  "Alligator?!  What the.."  Well, many folks have asked me exactly what alligator meat tastes like and I usually tell them, "Why it tastes just like crocodile!"  Actually, I would compare the taste of alligator to pork (not chicken).  The meat can be prepared a variety of ways with a lot of different sauces.  The main thing to be aware of when working with the gator meat is that it needs to be tenderized and cooked slowly, otherwise it will be tough and chewy with a texture akin to that of the gator's hide!  Concerning today's recipe-- I made a couple of changes to the traditional cajun piquante by adding some brown sugar and habanero peppers.  The sweetness hooks right up with the heat of the hot peppers in a way that leaves

I finally made it to the Hampton Inn and Embassy Suites in Fort Myers were we were staying for the night before conference. It is the worst drive.
