Last night I got a hold of 2 abalones. They were cooked using extremely high quality ingredients. Personally I have no idea how to cook them. All I know is they are quite expensive if you get one in a Chinese restaurant. I felt like eating one today for lunch but had no idea what [...]
This piece of abalone shell is from New Zealand. Mom-in-law found it in her drawer and handed it over to me to play with. She said she has lots of them but can't locate them at the moment. Oh well, what a waste. Here, the shell is wrapped simply with 22g stainless steel wire. Simple but very tight. At the back of the shell (or is it the front?), the wire is bend like a cross. Hmmm! a lot of crosses

Good day,I am actually updating this post on time! *pats self* Yesterday we had the opportunity to photograph an animated couple - Melissa and Michael - at the absolutely majestic Abalone Cove in Palos Verdes (Southern California). Despite the cold weather and light rain, the two of them braved the elements with only jeans and dress shirts! As for myself, I donned a heavy wool coat and thermals underneath. Scientists are still figuring out whether abalones are indeed high in nutrition but for me, unless you eat it everyday, eating it once a year won’t make a difference to your health. Abalones are [...]
SFgate writer Olivia Wu has written a great story about Abalone farming. Including the recipe David Kinch uses to prepare his Abalone, Meuniere Style at Manresa. The same dish I had only a month ago. After a ban 10 years ago from commercially harvesting Abalone off the coast of California, local farmers are beginning to grow their product and businesses. You can hunt for Abalone your self, if scuba diving, but strict rules, regulations apply to the season for doing so. I asked my brother to get me one 3 years ago and I'm still waiting. Instead, look for Abalone at your local seafood market or Asian Markets around holidays. Careful though- these guys are upwards of 20 dollars a pound.
Meuniere is a French term used for a method of cooking fish; prepared by lightly flouring the fish and frying it gently in butter and serving it with a small portion of butter, lemon juice and parsley.
For this dish, you can serve it 2 ways, either with or without the Vegetarian Abalone.Ingredients:½ carrot, sliced ½ cup broccoli, cut into florets 5 pieces Baby corn, sliced 8 pieces dried Chinese mushrooms, soak to soften and stalks removed ½ can button mushrooms, washed Vegetarian Abalone, sliced 2 teaspoon Vegetarian Oyster Sauce Sauce:½ tablespoon dark soy sauce ½ tablespoon Vegetarian Oyster Sauce 1 teaspoon sugar Cornstarch mixture How to do it: Blanch all the vegetables with stock or water for 5 mins. Remove and set aside. In a wok or pan, add 1 teaspoon oil and stir fry all the vegetables. Add 2 teaspoon of vegetarian oyster sauce and a pinch of sugar. Remove and place in a plate. To prepare the vegetarian abalone, boil ½ cup of water with the abalone for about 2 minutes. Remove and set together with the vegetables cooked earlier.
